On the eleventh day of Christmas my true love gave to me eleven pitchers of pompelmo, ten gingerbread men a leaping, nine cran-merry margaritas, eight bloody merry maids a milking, seven sparkling swans a swimming, six geese a laying snowflakes, FIVE BOX OF WINE, four calling birds (who live in a spice tree), three French martinis, two turtlenecks and Campari with a pear purée.
You may remember the first cocktail of Christmas (Campari with pear purée) courtesy of NYC mix master Joe Campanale. Well, I loved that low calorie cocktail so much I’m bringing Joe’s handy work back for the eleventh day of Christmas. The Pompelmo is another delicious Campari cocktail, which is combined with the fresh flavors of grapefruit and blood orange. Take it from me, this Christmas cocktail slides down real easy and goes great with pancakes. This morning mixed drink recipe conveniently makes a pitcher so it’s the ideal cocktail for holiday brunch. Not that mimosas and bellinis aren’t great but whip up a pitcher of Pomplemo for a memorable meal.
7 1⁄2oz Campari®
15oz SKYY Infusions® blood orange vodka
7 1⁄2oz triple sec
1 grapefruit, cut up
20oz grapefruit juice
20 dashes of Bitters
Place grapefruit wedges in a pitcher filled with ice. Add all other ingredients. Pour into a highball glass filled with ice and garnish with a grapefruit wedge.
