I confess, while visiting family for Thanksgiving I tuned in for the season premiere of Kourtney and Kim Take New York—much to the dismay of my parents who, were trying to decorate the Christmas tree while Kourtney Kardashian got an enema on screen... While I’m fairly used to the antics of the Kardashian sisters I was shocked to actually learn something healthy from the episode.
As an editor at SHAPE I couldn’t be more aware of how good kale is for you, it’s rich in vitamins, minerals, protein, fiber, phytonutrients and carotenoids. But after a kale recipe gone wrong a few years back I have not been able to stomach the idea of eating it again. Then, when I saw health-nut Kourtney eating Rhythm™ Kale Chips on screen I thought it might be time to try again—they looked crispy, nothing like the tough, yet mushy kale concoction I had ended up with.
It took me a few days to gather the courage to open the bag and give the chips a try but when a late afternoon salty snack attack hit me I decided it was time to go for it. And what do you know? I ended up eating the whole bag in one sitting! Turns out I LOVED the crispy texture and salty, slightly spicy flavor. While I felt a little bad about eating the entire two-serving bag I didn’t mind too much—it amounted to just 202 calories. Plus, it provided me with 286% RDA for vitamin A, 156% vitamin C, 12% calcium, and 18% iron. By using raw-dehydration (meaning 117 degrees or less) the kale retains it’s nutritional value and gains that great, crisp texture. Looks like this is how I will be eating my kale from now on!
