As we come to the end of the week, you probably don’t feel like cooking an elaborate meal, but might need to fuel up before you can even think about dolling up for a night out. (Or, let’s be honest, deciding you don’t even want to go out after that bite to eat.)
When I’m feeling lazy, it’s tempting to grab one of those everything-in-one-box taco kits and pour myself a margarita, but between the sodium and mysterious preservatives, I know it’s really not the best decision—especially if I decide to venture out and don’t want to feel bloated all night long.
Earlier this week I was trolling the web for dinner ideas and stumbled upon this lightened-up taco recipe. While skipping sour cream and using lean ground beef isn’t new information, this video really did prove to me how fast I can throw together tacos from almost scratch. A can of beans, a jar of salsa, and a few select spices boost the health factor and the flavor. I think me, margaritas, and these tacos have a date on the couch tonight!
