Since Hurricane Sandy, the team behind Shape.com has had a variety of temporary offices, and our latest outpost in Brooklyn is bare bones. We were thrilled with the arrival of bottled water and a mini-fridge on Monday, but after four weeks at our new location we only just received a microwave today.
I've just about had all the almond butter and banana sandwiches I can handle, so after the arrival of our new fridge, I headed straight to Pinterest to find a few no-heat healthy lunches to get out of my rut. While the micro will expand my options even farther, I still plan to make the delicious recipes below and enjoy them chilled.
Vegan Hummus Spiral Wrap
Open-Faced Thai Peanut Chicken Sub
This Asian-inspired sandwich may be intended to be eaten hot, but it works cold too. Whip up the chicken filling and serve over rice for dinner, then pack the rest along with a roll, and top when you’re ready to chow down at your desk.
Sure salads are the obvious healthy choice when it comes to no-heat lunches, but sometimes crisp greens just don’t appeal in the cold winter months. This hearty recipe made with caramelized squash, soft potatoes, and feta over spicy arugula straddles the line between salad and comfort food.
Simple Sandwiches 9 Ways
Sandwiches are quick and delicious but often lacking in the nutrient department. That’s why I love these suggestions that get both veggies and fruit between the bread!
Raw Broccoli Salad
This mix is a nutritional powerhouse—and a time saver. Because the broccoli is raw, you save on cooking time and clean up. Five ingredients and five minutes will have you out the door, healthy lunch in hand.
As an editor at SHAPE I have the chance to learn about the healthiest ways to cook, eat, and live from all sorts of experts but I’m also a single girl living in NYC with a busy schedule, active social life, and chocolate cravings. I’m here to share what works for me—and where I need a little help from you.
