Happy first day of summer fellow Fit Foodies! In honor of the summer solstice I'm sharing my favorite finds to help you have a happy, healthy, and skinny summer because it’s important to me that we can all enjoy both our barbecues and our bikinis all summer long!
Body by Bison
I love steak on the grill and a nice juicy burger but I’ve recently converted to bison meat instead of beef. It tastes just as good but is low in calories and fat and high in protein! In fact bison is lower in fat than chicken or fish. Bison burgers pack seven grams more protein, less than one quarter the fat and less than half the calories of an equivalent sized beef burger. That’s why I’ve stocked my freezer with Body by Bison hot dogs, burgers, and steaks. I feel good knowing that Body by Bison is all natural, grass fed meat, and no pink slime is ever used in their products.
Gold'n Plump Chicken Sausages and Bratwurst
As much as I love steak, I love sausages and beer boiled brats too but those are definitely an indulgence. Back in May, family-run Gold’n Plump launched its first line of chicken sausages and brats and I’m hooked. These non-smoked meats are gluten-free, nitrate-free, and have 50 percent less fat than traditional pork varieties. I love boiling the brats in beer and serving alongside a healthy cabbage slaw. This recipe from Martha Stewart is a great jumping off point. I’m also a huge fan of the hot Italian sausage with whole wheat pasta and a hearty dose of swiss chard and onions.
Mann’s Broccoli Slaw
Speaking of cabbage slaw, I recently learned about the amazingness that is broccoli slaw from Kelly Anderson, Certified Chef and Culinary Consultant. By swapping in the broccoli mix for cabbage you can up the fiber in your recipes by four times. Get Kelly’s delicious cilantro lime slaw recipe here. Using broccoli slaw ups the fiber from one to four grams! And without the use of mayo or sour cream this recipe clocks in at just 33 calories a serving!
With all this food we need a light summer cocktail to wash it all down! Mariposa is the first ever agave nectar liqueur, which just launched this April. A combination of agave nectar, 100 percent agave tequila, premium vodka, and an essence of rose oil and gardenia it’s the perfect mixer for a light and refreshing drink. The best part about Mariposa is that it’s just 70 calories an ounce making it 20 calories lighter than Cointreau, Triple Sec, Grand Marnier, and most other liqueurs. Replace the sugar in mojitos with Mariposa or simply add a splash of club soda and squeeze of lemon juice. Or try one of my favorite new cocktails the Butterfly Effect created by mixologist Jared Schubert. Fill a Collins glass or double old fashioned glass with ice and add one ounce of Mariposa and six ounces of Fresca. Garnish with a lemon wedge. Then pour yourself another, this drink has just 80 calories!
Tribe Organic Hummus
No, hummus is not new but I love that Tribe now has an organic line, which comes in three flavors: traditional, roasted garlic, and sweet roasted red peppers. I like to have hummus on hand for last minute summer entertaining. It’s also a great alternative to sugary ketchup on hamburgers, especially veggie or portabello burgers—roasted garlic is my favorite combo here. Or if you want to get fancy try this delicious grilled hummus veggie wrap. It combines some of the best parts of summer: grilling and fresh vegetables. A Few Good Books
Now that your pantry is stocked with Fit Foods you need to know what to do with them! Two cookbooks I’m loving right now are The Gardener & the Grill and Adventures in Grilling. If you like veggie heavy meals The Gardener & the Grill is for you. The authors focus on how, “grilling makes foods taste fuller, richer, and meatier—even with any meat” and share creative uses of produce you may never have thought of. Grilled romaine lettuce anyone? It’s actually amazing! And if, like me, you need gorgeous color photos to sell you on a new recipe check out Adventures in Grilling. The gorgeous photos will have your mouth watering and the pre-made menus such as summer picnic, tailgate party, and backyard barbecue are great for entertaining. Right now I’m obsessed with the snapper fish tacos—so refreshing!
