Vegan Breakfast, Day 1

I had all these marvelous intentions of getting to the grocery store yesterday and stocking up on brown rice, beans, and other healthy staples. I went to the gym instead… which is great! But it meant that my first day as a Vegan was going to be an improvisation.

 

The breakfast recommendation was Apple Cinnamon Oatmeal. But, No apple juice concentrate in the house, sadly, and I’m not sure this recipe would have kept me full till lunch anyway. Thank goodness I’m an oatmeal master—here’s what I invented instead.

Creamy Fresh Apple Cinnamon Oatmeal

½ cup plus a dash more old-fashioned oats

1 cup (ish) soymilk, original flavor

½ tsp cinnamon

1 tbsp raisins

½ crunchy red apple, cubed

2 tbsp Better n’ Peanut Butter

 

Directions

Combine oats, cinnamon, and soymilk (use water for less creamy consistency and fewer calories) in a small saucepan and simmer until most of the liquid has been absorbed. Stir in raisins. Top with cubed apple and spoonful of Better n’ PB, or the Vegan nut butter of your choice. Calories: about 400. I also ate a Clementine.

I didn’t calculate calories exactly because, with a naturally low-cal and low-fat plant-based diet, you don’t need to obsess over the numbers. It’s freeing!
