Last week my coworker mentioned that she would like to incorporate more salads into her diet, but she says she doesn’t have a lot of time before work to make one. Since I’ve been making salads almost every day, I shared my tips for a quick salad on the move and have seen her with one almost every day since! Here are my top tricks for a speedy salad:
I buy bagged spring mix, spinach, or lettuce, along with cherry or grape tomatoes, pre-sliced mushrooms, and pre-sliced almonds. With these four ingredients ready to go, making a basic salad takes less than three minutes.
For a quick punch of protein, I purchase grilled chicken strips that are already cooked that I can heat in the microwave at work. If I don’t feel like chicken, I keep meatless chicken nuggets (190 calories for four) on hand in the freezer. I also buy pre-made tuna salad pouches (100 calories each) that I can grab on my way out the door. Stocking these staples allows me to throw together a quick homemade meal, and can easily say “no” at 12:30 p.m. when my coworkers are passing a takeout menu around the office.
