Grilling the veggies gives this salsa great flavor without the fat of added oils
Salsa is a healthy condiment to add to almost anything, including chicken, steak and baked potatoes. And of course it’s a great party dip to serve with tortilla chips and sliced veggies for any social gathering. I found a great recipe online, but made it my own with a few changes. Check out the recipe below:
6 medium tomatoes
1 large onion
1 serrano chili pepper or 1 jalapeno pepper (remove seeds)
2 large garlic cloves
1 teaspoon salt
juice from ½ lime
Grill first four ingredients for 20 minutes or until well roasted on outdoor grill, or roast in the oven set at 350 degrees for one hour.
After ingredients are roasted, let cool for 20 minutes. Add to food processor. Add one teaspoon salt and a handful of cilantro. Blend for 20 seconds or until desired consistency. Remove from food processor. Add the juice of half of a lime and chill in the refrigerator for one hour. Serve with raw veggies and whole grain chips like these for a delicious and healthy snack!
