Fish: It’s what’s for dinner

It’s been awhile since I shared a recipe with you guys, so here’s my current favorite salmon recipe for four. It’s healthy, super-easy, and is on the table in less than 30 minutes. I like to serve it with steamed green beans topped with lemon juice, salt, and pepper.

  1. Season four 6-ounce pieces of salmon with salt and pepper.
  2. Heat 1 tablespoon extra virgin olive oil in a nonstick skillet. Place salmon in the pan and cook over medium heat for 5 to 6 minutes per side, or until opaque in the center.
  3. Mix ½ cup plain nonfat greek yogurt and 2 tablespoons each lemon juice, chopped capers, and chopped dill.
  4. Place one piece of salmon on each plate and divide yogurt topping evenly over fish.
