My aunt and uncle are currently visiting from India. The other day, they came over the to watch the Bears game with an Indian snack for us to enjoy while we watched. I was surprised at how simple, healthy, and tasty it was! In honor of my aunt, I’m calling it Usha-ma’s Masala Peanut recipe and sharing it with you.

Ingredients:
1 large tomato, chopped
1/2 red onion, chopped
1/4 cup cilantro, chopped
1 cup salted peanuts*
1 teaspoon chili powder
1 to 2 tablespoons lemon juice

Directions:
Combine tomato, onion, and cilantro in a large mixing bowl. Add peanuts, chili powder, and lemon juice, and mix well with a wooden spoon. 

I like scooping this snack with a spoon or scooping it up with baked tortilla chips for added crunch. And even though this recipe has healthy ingredients including lots of protein and vegetables, I limit my portion size since nuts do contain fat and the calories can add up.

*Note: If you use unsalted peanuts, you may want to add 1/2 teaspoon salt to the mix.
