Martha Stewart’s Spicy Peanut Chicken
One secret to weight-loss success is being prepared, and I’ve found that pre-cooking my dinner in the morning is one of the easiest ways to ensure I eat a healthy meal at night. Plus, knowing that my ready-in-minutes dinner is ready and waiting gives me something to look forward to at the end of the day!
This quick and easy recipe for spicy peanut chicken from Martha Stewart Living has become one of my go-tos. Not only is it full of flavor, I am able to prepare it in just five minutes and cook it in another 10 before I leave for work.
1/4 cup smooth peanut butter
1/4 cup water
1/4 teaspoon toasted sesame oil (I skip this since I’m allergic)
2 tablespoons soy sauce
2 teaspoons sambal oelek (My grocery store doesn’t carry this, so I substitute chili pepper sauce)
2 teaspoons rice vinegar
4 skinless chicken thighs
1 bunch broccolini
Preheat broiler. Mix together peanut butter, water, sesame oil, soy sauce, sambal oelek, and rice vinegar. Toss chicken thighs and broccolini in sauce, and place on a rimmed baking sheet. Broil 10 inches from heat until chicken is cooked through, about 10 minutes (watch to make sure it doesn't burn).
When I get home, I toss together a quick salad while the chicken is reheating for a healthy meal in minutes!
