These salad recipes use my favorite fall flavors and keep me from getting bored with the same old salad.
There’s no better way to up your veggie intake than to start each meal with a salad. But the old lettuce, cucumber, tomato combo can get boring in no time. My two favorites these days are spinach salad with chopped pear, pecans, and a light blue cheese dressing or romaine with apple chunks, walnuts, and a low-fat raspberry-walnut vinaigrette. If I feel like turning the salad into an entrée, I add chicken to one of the above combinations or mix together lettuce, ground turkey browned up with some salt-free taco seasoning, diced tomato and onions, a sprinkle of light cheddar and jack cheeses, and a drizzle of light salsa ranch dressing.
