Passing on salt

I love Pho, a Vietnamese broth-based soup full of vegetables and noodles and topped with bean sprouts and a squeeze of lime. I'll often go with my family to a restaurant near our house for a healthy, delicious dinner out-my husband orders his with tofu and I get mine with chicken and veggies. But even though there isn't anything particularly fattening in the dish, especially since I leave out three-fourths of the noodles, I usually weigh a few pounds more the next morning. My nutritionist, Katherine Tallmadge, R.D., told me that it's not the calories driving up the needle on the scale; it's the sodium. Even though it's all water weight and not extra fat, it's still discouraging to see. Because too much sodium isn't good for you, Katherine advises skipping the extra soy sauce, drinking loads of water to flush the mineral out of my system, and keeping my salt intake low the rest of the day if I want to continue ordering this dish.
