Work has been especially busy the last few weeks and James has been traveling, so I haven’t been motivated to plan dinner. Without a strategy, I find myself grazing on random things—say a few bites of James Wilson’s leftovers, a handful of cashews, a bowl of cereal, and some Chocolate Graham Goldfish. Not only have I been feeling unsatisfied, but I’ve put on a few pounds. My nutritionist, Katherine Tallmadge, R.D., reminded me that during hectic times, it’s more important than ever to have an idea of what I’m going to eat at dinner. Leaving it up to chance is a recipe for weight gain. So this past Sunday I made a list of meals, went to the grocery store, and cooked a veggie lasagna, five marinated chicken breasts, and a big pot of white beans and basil. I already feel more in control and less stressed!
