Chocolate is such a huge part of yesterday’s holiday and I figured that my nutritionist, Ruth Frechman, R.D., would tell me I couldn’t have any. But she actually said the opposite! Dark chocolate is full of antioxidants and, when eaten in moderation, is a good part of a healthy diet. She told me to choose 70 percent cocoa or higher to get the most benefits with the least amount of sugar and fat. Here’s a recipe for dark chocolate-dipped strawberries, one of my favorite waistline-friendly treats:
Dark Chocolate-Covered Strawberries
Microwave 6 ounces of dark chocolate in a glass bowl for 1 minute. Stir and heat in 15-second intervals until fully melted. Whisk in 3 tablespoons fat-free half and half. Dip 20 large strawberries into the chocolate and allow excess chocolate to drip back into bowl. Set on a baking sheet lined with wax paper until cool, then chill strawberries until set, about 20 to 30 minutes.
