Chewing on a sprig can freshen your breath. One cup contains 2 grams of fiber, 16 percent of your daily iron needs, and all the vitamin C you need in a day. The flat leaf (Italian) variety is more flavorful than the curly. Toss a handful into salads; chop and add to barley pilaf, pasta and bean salads, or roasted potatoes.
