Seven Kingdoms

Serve up mixologist Summer Bell’s Game of Thrones-inspired cocktail in a chalice for an extra dose of medieval inspiration.

Ingredients:
1 1/2 parts Plymouth Gin
1/2 part blueberry purée
1/4 part tarragon infused honey
1 part lime juice
1/4 part Absinthe
Soda water
Lime slice, for garnish
Tarragon, for garnish

Directions:
For the honey: Simmer two cups honey with two cups water. Remove from heat and add a bunch of fresh tarragon while honey syrup is hot. Let steep for two hours, then strain out solids.

For the drink: Shake first five ingredients and strain over ice in a tall Collins glass. Top with a little soda water, and garnish with a lime wheel pierced with a piece of fresh tarragon.
