The temps are dropping and the sweaters are coming out—which means it's time to drop the rosé and start sipping dark liquor instead. This Copper Rush cocktail, courtesy of Robby Nelson of The Long Island Bar in Brooklyn, is the perfect thing to serve up right now and all through the holiday season.
The mixture of high-class aged Scotch whisky, honey, and lemon is like the chilled, alcoholic version of hot lemon water with honey that you drink when you're feeling ~blah~. The best part? You can easily keep all of these ingredients on hand for an impromptu happy hour or cozy nightcap whenever the time feels right. It's got all the taste of a fancy AF cocktail, minus the pricey (see also: hard-to-find) ingredients and speakeasy bartending skills. (In the mood for something actually fancy? But this simple drink isn't just the perfect way to close out a chilly day. Serve it up after a holiday meal, and the gang will be snoozing comfortably on the couch in minutes. Copper Rush Cocktail
2 oz. Macallan 12-Year-Old Single Malt Scotch Whisky
3/4 oz. lemon juice
3/4 oz. honey syrup
Angostura bitters dashed on top of drink (as garnish and aromatic)
- Combine Macallan, lemon juice, and honey in a shaker.
- Add ice and shake vigorously.
- Strain mixture into a rocks glass with one large ice cube. Discard ice from shaker.
- Add bitters and serve.
