Ombré hair might be kinda on the out, but ombré food? All the way ~in~. Unless you've been living under a rock (or doing a social media detox), you know that the latest Internet craze is to make your food look like it came straight from Narnia. You can give almost any food a unicorn theme (from lattes to noodles), or take your toast to the next level by adding spirulina and turning it into mermaid toast. You can even head to Singapore to drink a mysterious blue bottle of edible-glitter-filled unicorn tears. (Yeah, we know, this is going a little too far.)
This ombré dragon fruit smoothie—courtesy of Jessica Rosen, certified holistic health coach and president of juice company Raw Generation—sidesteps the unicorn trend, but it's just as pretty. The gorgeous pink-purple hue, blueberry flakes, and ombré layering make it 100 percent worth a 'gram—not to mention, it's pretty darn good for you too. Dragon fruit has some serious health benefits, including preventing blood sugar spikes and lowering bad cholesterol. Grab fresh or frozen dragon fruit from a grocery or health food store (or even order it on Amazon Grocery, because what can't you get on there), and get blending. Ombré Dragon Fruit Smoothie
1/2 cup dragon fruit
1 cup unsweetened coconut milk
1 tablespoon raw honey
1/3 cup fresh blueberries
- In a blender, add all ingredients except the berries. Blend until well mixed.
- Pour half the blended mixture into a glass, then add the berries into your blender. Blend until the berries are fully mixed in.
- Fill the glass with the remaining smoothie.
