Ingredients

1cwhite rice flower
1calmond meal (or fine almond flour)
1tbaking powder
1⁄2tsalt
  lemon zest
1⁄2cvegetable oil
1cbrown sugar
2⁄3csoy milk
1⁄2 lemon, juiced
1⁄2tvanilla
  FOR THE GLAZE:
1Tlemon juice (or as needed to make thick glaze)
1⁄2tpowdered sugar

Instructions

Mix dry ingredients including lemon zest and set aside. Mix all wet ingredients except vanilla in a separate bowl and add to dry ingredients. Add vanilla after mixing dry ingredients. Bake at 350 degrees in donut pans for 12-15 min or until light and fluffy to the touch.
