Ingredients
| 3/4 cup wild rice | ||
| 1 | t | olive oil |
| 1⁄4 | c | finely chopped onion |
| 1⁄4 | c | finely chopped carrot |
| 1⁄4 | c | finely chopped celery |
| 1 | garlic clove, minced | |
| 1⁄2 | t | dried thyme |
| 1⁄4 | c | dried cranberries |
| 1 | c | low-sodium chicken broth |
Instructions
Rinse wild rice under cold water; set aside. Heat olive oil in a medium saucepan on medium-high. Add onion, carrot, celery, and garlic and sauté until softened, about 5 to 7 minutes. Add thyme, dried cranberries, and chicken broth to the vegetables and stir. Add rice to the vegetables and cook according to rice package directions (about 30 minutes). Serve as a side dish with the Cornish game hen.
