Ingredients

  3/4 cup wild rice
1tolive oil
1⁄4cfinely chopped onion
1⁄4cfinely chopped carrot
1⁄4cfinely chopped celery
1 garlic clove, minced
1⁄2tdried thyme
1⁄4cdried cranberries
1clow-sodium chicken broth

Instructions

Rinse wild rice under cold water; set aside. Heat olive oil in a medium saucepan on medium-high. Add onion, carrot, celery, and garlic and sauté until softened, about 5 to 7 minutes. Add thyme, dried cranberries, and chicken broth to the vegetables and stir. Add rice to the vegetables and cook according to rice package directions (about 30 minutes). Serve as a side dish with the Cornish game hen.
