Sweet Pea and Mint Soup

Who knew that peas and mint could make such an explosive combination? Making this soup should be a snap, since you likely already own many of the simple ingredients it takes to create this nourishing dish.

Ingredients:
1 bag frozen sweet peas
1/4 c. mint
2 stalks of celery, chopped
Salt and pepper to taste
Water

Directions:
In a pan, cover the peas in water and cook over medium heat until they’re soft. Allow them to cool before placing in a blender. Add mint, and puree until smooth. Add salt and paper to taste. Chill.
