Padma Lakshmi's newest cooking challenge involves ... LAY'S® potato chips. On Tuesday, the host of Top Chef will join Frito Lay's executive chef for a cooking demo of roasted red and yellow beets with Mediterranean herbs and cheese — a recipe inspired by LAY'S® Kettle Cooked Creamy Mediterranean Herb Flavored Potato Chips. The event kicks off a week in which guest chefs — like Jet Tila and Colombe Jacobsen — will create dishes in Frito-Lay's Flavor Kitchen, recreated from its Dallas headquarters in the heart of Times Square and streamed live to Facebook. Each day will feature a different product from Frito-Lay's newly-expanded array of snacks made with all-natural ingredients. Roasted red and yellow beets with Mediterranean herbs and cheese
2 Yellow Beets
2 Red Beets
2 Tbsp. olive oil
1 cup Frisee
2 tsp. Honey
Pinch of salt
Pinch black pepper

Roasted beets:
Pre heat oven to 400 degrees. Wash beets and slice both ends off. Wrap each beet individually with foil and cook for 1 hour. Remove from oven and immerse in and ice water bath. Once chilled, remove foil, peel and chop into 1” pieces.

Herbed Goat Cheese:
8 oz. goat cheese
1 tsp chopped basil
1 tsp chopped oregano
1 tsp chopped tarragon
¼ tsp orange zest
¼ tsp lemon zest
¼ tsp black pepper ground
¼ tsp cardamom ground
¼ tsp salt, kosher
Mix well in bowl, form and shape into 1 ¼ inch log, chill until firm. Slice into 1/4” rounds.

Spread Frisee evenly on platter or serving dish. Place beets and cheese coins on top of Frisee. Drizzle
with olive oil and honey. Salt and pepper to taste.
