During a recent visit to Trader Joe's, I added a few new things to my shopping cart. First, I bought the makings for a high-protein, high-fiber meal suggested by my friend Mark: a veggie burger, crumbled and stuffed into a whole-wheat tortilla with either a sprinkle of Tabasco sauce or a tablespoon of King Harvest spinach hummus (a healthier alternative to my old favorite spreads, mayonnaise and Ranch dressing). I also picked up some fresh pomegranate seeds, which are a tasty addition to my favorite spinach, dried cranberry, and walnut salad. I love them even more since they're pre-packaged; I don't have to pry the seeds from a whole pomegranate with my fingers. I always knew they were healthy, but was pleasantly surprised to learn that the fruit is also packed with disease-fighting antioxidants, fiber, folic acid, niacin, and potassium.
