I've been working late, so a few recent dinners have consisted of a bag of pretzels with a scoop of peanut butter. But I've started stashing a box of Morningstar Farms Broccoli Cheddar Veggie Bites ($4; available in grocery stores) in our office freezer for a hot, satisfying snack or light meal. After a few minutes in the toaster oven, these crispy breaded nuggets taste like a creamy broccoli casserole.
