Basil
Loaded with vitamin C, beta-carotene, vitamin B6, and magnesium, basil comes in over 50 different varieties, such as purple or lemon. The herb pairs beautifully with any tomato dish. It also is the main ingredient in traditional pesto sauce. Another way to use basil is to chop a few leaves and sprinkle over chicken or white bean soup. Other herbs can overpower basil, so use it when you want the flavor to shine through.
Cilantro
These pungent leaves have a citrusy flavor. Try it in black bean soup, salsa, or rice and bean dishes. It marries well with shrimp or salmon--add some to a marinade made with citrus juice (lime, lemon or orange).
Cinnamon
This spice has been shown to keep blood sugar levels in check by helping the body metabolize glucose faster. It adds a warm, sweet flavor to foods. Try cinnamon on oatmeal, sweet potatoes, winter squash, and carrots. You can also add some to couscous, or use it as a part of rub on chicken or pork.
Cumin
These savory seeds may reduce heartburn and improve digestion. Cumin is the main ingredient in curry and is also a popular spice in Mexican cuisine. On its own, add it to guacamole, chili, or black bean soup.
