Preheat oven to 450° F.
To prepare the ratatouille, combine all ingredients except crepes and hummus in a large roasting pan and toss to combine.
Roast the mixture for 10 minutes, until the vegetables are tender. Arrange the buckwheat crepes on a flat surface. Top each with 1 tablespoon of the hummus and one-eighth of the ratatouille mixture. Roll up and serve.
