Double Mustard Maple Salmon
Serve this power food, rich in omega-3 oils, with a sauce that's as sweet as it is zesty.
Ingredients
| 2 | tsp olive oil |
| 1/2 | cup yellow mustard seeds |
| 3 | tbsp Dijon mustard |
| 3 | tbsp real maple syrup |
| 1 | tsp balsamic vinegar |
| 1/4 | tsp coarse salt |
| 1/4 | tsp freshly ground pepper |
| 4 | 6-ounce salmon fillets |
Directions
Heat the oil in a small nonstick skillet over low heat. Add mustard seeds; stir to coat with oil. Cover and cook until seeds begin to pop. Turn off heat but keep the skillet covered until popping stops, for about 1 minute.
Transfer the mustard seeds to a shallow dish and blend together with mustard, maple syrup, vinegar, salt and pepper. Add the salmon fillets and turn to coat with mustard mixture. Marinate in a refrigerator for 20 minutes.
Prepare broiler. Remove the salmon from marinade; reserve marinade. Place the salmon on a foil-lined baking pan and carefully spoon mustard seeds from the marinade over each salmon fillet. Broil for 5 minutes; cover fish lightly with a piece of aluminum foil (to prevent seeds from scorching). Cook for 5 minutes more, or until fish flakes easily when tested with a fork.
