Smoky Shrimp with Bacon & Chipotle Chilies

Ingredients
| 3 | strips lean bacon |
| 1 | pound jumbo shrimp, peeled and deveined |
| 1/2 | cup red onion, chopped |
| 3 | cloves garlic, minced |
| 2 | canned chipotle chilies, minced |
| 1/2 | tsp ground coriander |
| 1 | cup salsa |
| 1 | 4-ounce jar sliced roasted red peppers, drained |
| Salt and freshly ground black pepper to taste |
Directions
Place the bacon in a large nonstick skillet over medium heat. Sizzle, turning occasionally, until cooked through (about 4 minutes).
Cool and crumble into bits. Season the shrimp with salt and pepper. Place in the same skillet used to cook bacon over medium heat and sauté for 1 minute. Transfer to a plate. Add onion, garlic, chipotle chilies, and ground coriander to skillet; sauté for 3 minutes. Stir in the salsa and roasted red peppers. Reduce heat to low, cover and simmer for 8 minutes. Stir in the shrimp and heat until just cooked through (about 2 minutes). Season with additional salt and pepper to taste. Serve garnished with crumbled bacon.
