Ingredients
| 2 | cups light silken tofu |
| 1/2 | cup milk chocolate, melted |
| 1 | tbsp instant coffee or espresso granules |
| 1 | tspn boiling water |
| 1/2 | cup low-fat sour cream |
| 1/2 | cup sugar |
| 1 | tsp vanilla |
| 1/2 | tsp cinnamon |
| 2 | tbsp crystallized ginger, chopped |
Directions
Drain the tofu and blend it in a food processor until smooth. Add chocolate. Combine the coffee or espresso with 1 teaspoon of boiling water. Add it to the tofu. Blend in the sour cream, sugar, vanilla, and cinnamon until creamy. Transfer to serving cups. Sprinkle with ginger. Chill well before serving.
