| 1 | cup all-purpose flour |
| 1/2 | cup whole-wheat flour |
| 1 | cup granulated sugar |
| 1 1/2 | tsp cinnamon |
| 1/2 | tsp salt |
| 1/2 | tsp baking soda |
| 3 | egg whites |
| 1/3 | cup applesauce |
| 3 | tbsp buttermilk |
| 1 1/2 | cups fresh cranberries |
| 1/2 | cup walnuts, chopped |
| Cooking spray |
Directions
Preheat oven to 350° F. Lightly coat a loaf pan with cooking spray.In a medium-size bowl, combine flours, sugar, cinnamon, salt, and baking soda. In a larger bowl, beat the egg whites at a high speed for 1 minute. Beat in applesauce and buttermilk. Gradually add the flour mixture and beat until just combined. Stir in the cranberries and walnuts. Transfer to the prepared loaf pan.
Bake for 45 minutes, or until edges begin to pull away from the sides of the pan and a toothpick inserted in the center comes out clean. Slice and serve.
