Soft Roasted Winter Vegetables with Herbs

Ingredients
| 4 cups | broccoli florets |
| 2 | yams, trimmed and cut into bite-size chunks |
| 1 | red onion, peeled and cut into bite-size pieces |
| 1 1/2 tbsp | olive oil |
| 1 tsp | dried Italian herb seasoning |
| Salt and pepper to taste |
Directions
Preheat oven to 375° F. Place the vegetables in a roasting pan. Add oil, herbs, salt, and pepper. Toss well to mix. Shake roasting pan to scatter thhe vegetables evenly. Roast, turning the vegetables with a spatula occasionally, for 45 minutes (or until soft and browned).
