Garlicky Greens, Sicilian Style
Serve these dark, leafy greens drizzled with olive oil, raisins, olives, and garlic tastes hot or cold.
Ingredients
| 3/4 pounds | kale, rinsed and coarsely chopped |
| 3/4 pounds | Swiss chard, rinsed and coarsely chopped |
| 1 tsp | olive oil |
| 1/3 cup | golden raisins |
| 1/4 cup | pitted black olives (about 9), slivered |
| 4 cloves | garlic, minced |
| 1/4 tsp | red pepper flakes |
| Salt to taste |
Directions
Bring 2 cups of water to a boil in a large, wide saucepan. Add kale and cover pan. Cook for 4 minutes. Stir in chard and cook for 3 minutes, until the water is almost gone. Transfer the vegetables to a bowl.
Heat the oil in the same saucepan used to cook greens over medium heat. Add greens, raisins, olives, garlic, and red-pepper flakes. Sauté for 2 minutes or until greens are tender. Season with salt to taste.
