
Rainbow Fruit Salad with Candied Walnuts

Ingredients
| 2 | medium oranges |
| 2 | kiwi fruit, peeled, halved, and thinly-sliced |
| 2 cups | red or purple grapes |
| 1 cup | sliced strawberries |
| 1 | medium mango, peeled, pitted, and diced |
| 1/2 cup | walnut halves and pieces |
| 1 tbsp | granulated sugar |
Directions
Grate the rind from 1 orange and place it in a decorative bowl. Peel both oranges, quarter them, and cut them into thin slices. Add kiwi, grapes, strawberries, and mango to the bowl.
Preheat oven to 350° F. Rinse walnuts under water and drain. Place in a small bowl and add sugar. Toss to coat. Scatter sugared nuts on a foil-lined baking sheet and bake for 6 minutes, or until crisp. Add to fruit salad and toss to mix.
Note: Use a carrot peeler to remove the skin from the kiwi.
