Ingredients for your rhubarb recipe in a glass
1 bunch rhubarb
1 lime, cut into wedges
1 lemon, cut into wedges
1 orange, cut into wedges
pinch cardamom
pinch turmeric
pinch pink peppercorns (can substitute black)
¼ cup Gin
1 tablespoon lime juice
1 tablespoon egg whites
1/3 cup seltzer
Directions for your rhubarb recipe in a glass
Put rhubarb in a large pot and cover with water. Wrap the lime, lemon, orange, cardamom, turmeric, and peppercorns in a cheesecloth and tie with string.
Place the bundle in the pot and heat on low for 2 hours, until rhubarb is soft. Cool and remove cheesecloth, then strain into a blender; puree until smooth.
Fill a glass or cocktail shaker with ice. Add 1/3 cup rhubarb puree, gin, lime juice, and egg whites. Cover and shake vigorously. Strain into a glass; mix with seltzer.
