Apple, Squash, and Cranberry Crumble
This tasty treat is so low in calories, you can top it with a tablespoon of whipped cream and still be under 200.

3 medium Golden Delicious apples,
peeled, cored, quartered,
and cut into ¼-inch-thick slices
1 ½ cups diced butternut squash
½ cup fresh cranberries
7 tablespoons brown sugar, divided
1 tablespoon fresh lemon juice
10 teaspoons flour, divided
Zest of 1 lemon
½ teaspoon ground cinnamon, divided
Pinch of salt
8 teaspoons cold butter,
cut into pieces
Directions
Preheat oven to 375°F. In a large bowl, toss apples, squash, cranberries, 3 tablespoons of the brown sugar, lemon juice, 2 teaspoons of the flour, lemon zest, ¼ teaspoon of the cinnamon, and salt. Transfer to a 1 ½-quart or 8-inch square baking dish.
In a small bowl, combine remaining 4 tablespoons sugar, 8 teaspoons flour, and ¼ teaspoon cinnamon. Using a pastry blender or two knives, cut in butter until mixture resembles coarse crumbs (don’t use your hands, as they will melt the butter). Sprinkle mixture evenly over fruit.
Bake 40 to 45 minutes or until fruit bubbles at the edges and top is brown. Place on a rack and cool 10 minutes. Spoon crumble into six dessert bowls and serve.
