If You Like Gourmet Camping

If the only thing keeping you from a rafting trip is the hot-dogs-on-a-stick campfire cuisine, it's time to pack your waterproof bags. Sign up to run Class IV rapids on the Main Salmon River in Idaho, the Rogue River in Oregon or the Chilko River in British Columbia with O.A.R.S. (Outdoor Adventure River Specialists) and you'll feast on gourmet meals each night. Guest chefs will teach you how to make dishes like black rosemary-broiled prawns and porcini risotto. After spending your morning navigating rapids, you'll set up camp and work up an appetite with a hike or round of horseshoes. Guides will also lead you on a full-moon hike, if you want. After dinner, you and your pals can count shooting stars.

DON'T MISS Since gourmet meals are more enjoyable when matched with the right grape, you'll get lessons on pairing food and wine. You can bring your own, but O.A.R.S. stocks one of the rafts with an impressive stash of reds and whites.
