One of the biggest changes I've made to my diet over the past six months is adding more vegetables to every meal. In the winter that meant frozen broccoli and bagged spinach, but now that the weather's warmer, I'm ready to expand my produce repertoire. So this past weekend I took a trip to my local farmer's market. I couldn’t believe the selection—from baby artichokes to young pea tendrils—and loved knowing that what I was getting was fresh and locally grown. When I got home I had a lot of fun experimenting with new recipes. My favorite one was when I boiled the baby artichokes, drizzled them with olive oil and lemon juice, and then tossed them with capers, chopped onion, garlic, parsley, salt, and pepper. Yum! I look forward to seeing what other types of produce will hit the stands as the summer progresses.
