Rainbow Fruit Salad with Candied Walnuts

This colorful dessert is healthy and refreshing.

Ingredients

2 medium oranges
2 kiwi fruit, peeled, halved, and thinly-sliced
2 cups red or purple grapes
1 cup sliced strawberries
1 medium mango, peeled, pitted, and diced
1/2 cup walnut halves and pieces
1 tbsp granulated sugar

Directions

Grate the rind from 1 orange and place it in a decorative bowl. Peel both oranges, quarter them, and cut them into thin slices. Add kiwi, grapes, strawberries, and mango to the bowl.

Preheat oven to 350° F. Rinse walnuts under water and drain. Place in a small bowl and add sugar. Toss to coat. Scatter sugared nuts on a foil-lined baking sheet and bake for 6 minutes, or until crisp. Add to fruit salad and toss to mix.

Note: Use a carrot peeler to remove the skin from the kiwi.
