Bacon and Eggs in a Jar
Remake the classic brunch spread of bacon, eggs, cheese, and spinach into this portable, convenient, and delicious version.
- 2 eggs
- 1 handful fresh spinach
- 1/4 cup shredded cheese
- 2 slices turkey bacon
- Mix eggs, spinach, and cheese in a bowl. Add salt and pepper to taste.
- Pour mixture into a mason jar. Microwave for 1 1/2 to 2 minutes, checking often. Eggs will puff up while cooking but will deflate when taken out, so don't worry if it rises higher than the jar.
- Meanwhile, cook bacon slices according to package directions. Crumble bacon slices on top of eggs.
