Beef and Barley Skillet

Ingredients

  • 1 pound lean ground beef
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 15 ounces low-sodium beef broth
  • 8 ounces tomato sauce
  • 1 cup water
  • 2 medium carrots, chopped
  • 1 small tomato, chopped
  • 1 small zucchini, chopped
  • 1 cup medium pearl barley
  • 2 teaspoons Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Place a large skillet over medium heat. Add ground beef and onion, and cook 6 to 8 minutes. Drain if necessary. Add garlic and cook 1 minute. Add broth, tomato sauce, and water, and bring to boil. Stir in vegetables, barley, and seasonings. Reduce heat, cover, and simmer 45 to 50 minutes until barley is tender.
