Blueberry Waldorf Salad
- 2 cups fresh blueberries
- 2 Gala apples
- 2 tablespoons fresh lemon juice
- 6 ounces plain, low-fat Greek yogurt
- 1/4 cup chopped, toasted walnuts
- In a medium sized bowl, whisk together the yogurt and the lemon juice. Mix in the apple, blueberries and walnuts. Serve on a bed of fresh greens, if desired.
