- Black beans
- Cooked rice
- Scrambled eggs
- Warm 2 tortillas in a microwave. Top one-third of each tortilla with black beans, cooked rice, scrambled eggs, salsa, and cheese; fold in the sides and roll tightly. Wrap each burrito in plastic wrap or foil. Keep refrigerated; when ready to eat, unwrap and microwave for 1 to 2 minutes.
- Make a big batch of burritos and store them in the freezer for a healthy lunch whenever you want.
