Satisfy a craving with a dose of infection-fighting, vision-protecting beta-carotene to boot. And with just three ingredients, carrot fries take hardly any time to prepare.
- 6 large carrots
- 2 tablespoons olive oil
- 1/2 teaspoon sea salt
- Preheat oven to 425 degrees.
- Cut each carrot into 2-inch long sections, then cut each section into thin sticks. Toss carrots with olive oil and salt in a large bowl. Spread evenly on a parchment paper-lined baking sheet. Bake for 18 to 22 minutes, until browned.
