Chicken-Coconut Rice

Ingredients

  • 2 tablespoons unsweetened coconut flakes
  • 1 cup brown rice
  • 1/4 cup chopped carrot
  • 1/4 cup chopped bell pepper
  • 3 ounces grilled chicken
  • Store-bought peanut sauce

Directions

  1. Stir coconut flakes into brown rice. Add carrot and bell pepper and top with grilled chicken. Drizzle with peanut sauce.
