Cinnamon-Apple Crisp Crêpes
- 4 Granny Smith apples, peeled, cored and diced
- 3/4 cup raisins
- 1/3 cup packed brown sugar
- 1/4 cup water
- 1 lemon, zest and juice
- 1/2 teaspoon cinnamon
- 8 Sweet Batter Crepes
- 1 cup low-fat granola
- Combine first six ingredients in a medium saucepan. Simmer over medium heat 5 minutes, until apples are tender and liquid is reduced. Arrange crepes on a flat surface. Top with apple mixture and granola. Roll up and serve.
