Coyote Black Beans

Ingredients

  • 1 15 ounce can black beans, rinsed and drained
  • 1 teaspoon minced fresh garlic
  • 2 green onions, chopped
  • Salt
  • Pepper
  • 2 tablespoons chopped fresh mint
  • 1/2 cup crumbled goat cheese
  • 1/4 cup half-and-half

Directions

  1. In a small saucepan, mix beans, garlic, onions, salt and pepper to taste, and mint. Simmer over medium-low heat for 5 to 10 minutes. Mix in goat cheese and half-and-half.
