Healthy Homemade Lemon Donut

Ingredients

  • 1 cup white rice flower
  • 1 cup almond meal (or fine almond flour)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Lemon zest
  • 1/2 cup vegetable oil
  • 1 cup brown sugar
  • 2/3 cup soy milk
  • 1/2 lemon, juiced
  • 1/2 teaspoon vanilla

For the Glaze:

  • 1 tablespoon lemon juice (or as needed to make thick glaze)
  • 1/2 teaspoon powdered sugar

Directions

  1. Mix dry ingredients including lemon zest and set aside. Mix all wet ingredients except vanilla in a separate bowl and add to dry ingredients. Add vanilla after mixing dry ingredients. Bake at 350 degrees in donut pans for 12-15 min or until light and fluffy to the touch.
