- Chopped toasted nuts
- Stir together 1/3 cup cooked red quinoa and 1/4 teaspoon pure vanilla extract in a small bowl; set aside. Place 1/3 cup plain low-fat Greek yogurt in a pint-size mason jar. Add most of the quinoa, followed by 1/2 cup mixed fresh or frozen berries. Add another 1/3 cup yogurt, remaining quinoa, and 1 tablespoon chopped toasted nuts. Drizzle with 1 teaspoon honey, cover, and refrigerate overnight.
