Sexy Bun-Less Burger

Ingredients

Veggie patty:

  • 1/2 cup black beans (soaked overnight, then boiled for 30 mins.)
  • 1 cup mushrooms
  • 1 cup leeks and carrots (diced)
  • 3/4 cup gluten-free oats
  • 2 tablespoons nutritional yeast
  • 1/2 tablespoon tamari soy sauce
  • 1/2 teaspoon Himalayan pink salt
  • 1/2 teaspoon ground cumin
  • 1/8 - 1/4 cup fresh cilantro
  • 1/8 - 1/4 cup fresh parsley
  • 1 3/4 tablespoons fresh rosemary
  • 1/4 teaspoon ground pepper
  • 1 egg

Raw tomato relish:

  • 1/2 cup sun-dried tomatoes (soaked overnight)
  • 1/8 cup dates (soaked overnight)
  • 1/4 cup parsley
  • 2 tablespoons rosemary
  • 1/2 cup virgin olive oil
  • 5 teaspoons apple cider vinegar
  • 2 teaspoons tamari soy sauce
  • Pinch of chili powder
  • 1/2 teaspoon Himalayan pink salt

To serve:

  • Leafy greens
  • Live cultured sauerkraut or kimchi
  • Broccoli and cauliflower (steamed)
  • Cultured kefir cheese (optional)
  • Alfalfa sprouts

Directions

  1. Blend and mash black beans. Roughly blitz raw mushroom, then leeks and carrots together, and add rest of the ingredients. Season to taste and carefully shape into patties.
  2. Pan fry patties in coconut oil, macadamia oil, or virgin olive oil over medium heat until crispy and light brown on both sides.
  3. For the relish, mix all ingredients together
  4. Serve everything on bed of mixed leafy greens, live cultured sauerkraut or kimchi, steamed broccoli and cauliflower, or cultured kefir cheese with relish on the side. Garnish with fresh alfalfa sprouts.
